Cool Mint Oreo Minis!
It's one of my dear friend's birthdays tomorrow (I won't say how old she is) and many months ago (possibly even last year) she jokingly requested something like these by pinning them onto one of my pinterest boards. Well Amanda, I heard you...and here they are!! Happy Birthday my friend! Cool Mint Oreo Cookie Crust on the bottom, incredibly delicious Chocolate Cake, topped with Cool Mint Oreo Frosting, and garnished with...you guessed it, a Cool Mint Oreo!! It's super delicious!!

Ok, so I'm the lucky birthday girl. (And thank you, Julie, for not revealing my age!) I LOVED these cupcakes. I can't believe you put so much detail into these cupcakes! From the cookie crust on the bottom, to the super rich icing, and the cookie piece on top! Simply amazing. And so, so, so flavorful.
